Featuring a WoodStone oven, a brick fired oven reaching temperatures over 800 degrees. Switch imports their flour, which is a double-0 (00) flour, imported from Italy. The tomatoes are San Marzano tomatoes, also imported from Italy. The mozzarella cheese is made every single day in-house. Switch has put all of its energy into making absolutely everything from scratch, in house. The pizzas are Neapolitan-style, which is the region of Italy all pizzas come from (Naples). They include everything from your basic Margherita pizza (tomato, basil, mozzarella) to the more regional “Switch Pizza: which has toasted walnuts, gorgonzola cheese, dolce latte pear cream sauce, roasted pears, imported Italian ham (prosciutto d’Speck) and arugula, which is a pizza typical to the Naples region of Italy. BUT pizzas are not the only thing they are focusing on. The Philly cheesesteaks are absolutely authentic. The chef/owner hails from Philadelphia and has taken the time to source the rolls for the cheesesteak from a bakery in Philadelphia. The hot roast beef and pork sandwiches are all slow roasted in house. After 5:00 pm regional Italian pastas are available, from simple pastas extremely popular on the streets and piazzas of Rome (Cacio e Pepe – pronounced Ka-chee-o a Pa-pay) to the red sauce found typically in the Benevento region of Italy.
